Banana Bread with Chocolate Chips and Walnuts

This was my first attempt at banana bread. The addition of chocolate chips made it very dessert–like. It was especially delicious with a scoop of vanilla ice cream on top.  I would try it again and make cupcakes!

Banana Bread with Vanilla Ice Cream

Ingredients

  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 3 large very ripe bananas, mashed
  • 1/3 cup sour cream
  • 1/3 cup buttermilk I used 1/3 cup plain non fat greek yogurt
  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup walnuts or pecans

 

Instructions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10 loaf pan.

In a large bowl, use a mixer to cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla. Mix in mashed bananas, sour cream and buttermilk (yogurt). Combine flour, salt, baking soda and baking powder. Stir flour mixture into sugar/banana mixture. Fold in the chocolate chips and walnuts or pecans. Pour batter into prepared pan.

Bake in preheated oven for 35 to 45 minutes, or until golden brown and top springs back when touched. Remove from oven and let cool completely for about 45 minutes before removing from pan. Cool completely before slicing.
