Oatmeal Chocolate Chip Cookies

These oatmeal cookies are a year round crowd pleaser. In the past 2 months I have made them 3 times. I suppose the oatmeal makes the cookies healthier, but not sure if “cookies”and “healthy” belong in the same sentence. Either way they are delicious.

Oatmeal chocolate chip cookies

Recipe: adapted from Betty Crocker

Ingredients

  • 1 1/2 cups packed brown sugar
  • 1 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups quick-cooking oats
  • 1 1/2 cups Gold Medal® all-purpose or unbleached flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips (6 oz)
  • 1 cup chopped walnuts or pecans
  • 1/2 cup dried cranberries

Instructions

Heat oven to 350°F. In large bowl, mix brown sugar and butter until blended. mix in vanilla and egg until light and fluffy. Mix in oats, flour, baking soda and salt; stir in chocolate chips, cranberries and nuts.

Onto ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.

Bake 9 to 11 minutes or until golden brown. Cool slightly; remove from cookie sheet to wire rack.
