Thanks to Steve, this recipe has become a favorite in our kitchen. As with every salad-esque dish I was instantly skeptical–I need my carbs–but upon first bite I realized this one was a keeper. The combination of panko-crusted chicken, peppery escarole, and pickled red onions, creates a form of deliciousness not typically associated with a salad. Top it off with some deconstructed hazelnut pesto and dinner can’t get much better. Trust me.

I’ve been looking around for a simple weeknight chicken dish that doesn’t have a list of a million ingredients. On my quest, I came across this chicken marsala recipe on Smitten Kitchen. If you haven’t checked out this blog, you are seriously missing out. The photos and the recipes are top notch and I was excited to finally make something from such an inspirational blog. I choose to serve this with pasta (what else), but alternately you can pair with roasted potatoes or all alone.

Tamar and Josh had us over to their new place for dinner. They made mushroom and spinach stuffed chicken and it was totally delish. It was also the perfect thing to serve for a dinner party. You can pretty much have it all ready to go and just pop it in the oven while your guests/friends are eating apps. It looks so fancy too, when actually it is super easy.

I bought this amazing wok a few years ago and love to invent reasons to use it. I also had a serious craving for Chinese food, but wanted to keep things somewhat healthy.
